Colorful, Edible Gingerbread Hotel Unveiled at Hilton Garden Inn Carlsbad Beach

The Gingerbread Hotel in the lobby of Hilton Garden Inn Carlsbad Beach features gingerbread walls made from scratch using 50 pounds of flour and 30 pounds of sugar. The hotel’s executive chef Aaron Arko referenced overhead hotel photography to design his gingerbread creation, which took four full days to complete, and which is four feet long, three feet wide and 14 inches high.

Crafted entirely of gingerbread and other delicious components, the Gingerbread Hotel features architecture and a layout inspired by Hilton Garden Inn Carlsbad Beach itself, with the addition of an ice skating rink placed where the hotel’s swimming pool is located. The mini-hotel’s corner pillars are made of red and white candy canes, while its colorful front drive entrance features a rooftop covered in gumdrops and peppermint candies. Behind the front drive porte cochere, the structure’s main roof is covered in fluffy white frosting, which has also been used to outline windows and doors. 

Added holiday highlights at the property will include the hotel’s special Christmas Eve three-course dinner, presented at Carlsbad Beach Bistro from 4 to 10 p.m. on December 24, and featuring Hand-Carved Prime Rib with Au Jus and Creamy Horseradish, Mashed Potatoes and Asparagus, and a Chocolate Raspberry Decadence Torte. Christmas Eve Dinner at Carlsbad Beach Bistro is priced at $28.95 per person, with the restaurant’s popular dinner menu also available on that evening.

On Christmas Day, December 25, Carlsbad Beach Bistro will offer the ultimate holiday breakfast buffet, presented over extended hours from 7 a.m. to 2 p.m.,  and featuring the hotel’s daily buffet experience and the holiday addition of freshly-carved Honey-Baked Ham, Silver Dollar Rolls and a Christmas Dessert Station full of Cakes, Pies and Cookies. This year’s Christmas Breakfast Buffet is priced at $16.95 for adults and $9.95 for children under the age of 12.
