Twenty/20 Grill & Wine Bar at the Sheraton Carlsbad Resort & Spa presents “Grill with the Masters.” This cooking series will cover “how to” techniques, special tips, the use of both common and unique barbeque and marinade ingredients along with complimentary backyard beverages, and of course, tastes from the grill.  The series will also feature take-away recipe cards as well as detailed instruction on all aspects of grilling from using smoke for flavor to barbequing with mesquite, coals and gas.  Master insight and guidance offered on the importance of setting the correct grilling temperatures for the perfect meal outcome.

Classes will be held on alternating Wednesday evening’s beginning on the first day of summer, June 20th, and ending September 5th. Chef Eric Wick brings a rich and varied culinary background to make this class an incredible experience.  Classes will be held outside on the lawn area adjacent to Twenty/20 Bar & Grill.  A perfect Father’s day gift, classes cost $30 per person or the series may be purchased for $149 and will include a Chef’s apron.  Open to both the Public and Resort Guests, limited tickets are available and advanced registration is suggested.  We excited to announce that Voss Water has partnered with us to provide complimentary water for attendees and a portion of every ticket sale will benefit Challenged Athletes Foundation®.

 

DATES: There will be 6 classes to be held on alternating Wednesday evenings.  The first class is on June 20th and final class on September 5th from 6:30pm to 7:30pm with the following themes

June 20th: Rub & Marinades
This class will review and teach classic spice rub combinations, marinades and types of BBQ sauces that define the different regional types of BBQ found in the US from Memphis, Kansas City and Carolina to Texas barbeque styles.

July 11th: American Southwest BBQ
Discover the barbeque that made the west famous. In this series, attendees will study and undertake cooking techniques introduced by the Native American Indians, Mexicans and the American cowboys. Learn to make dishes such as grilled achiote marinated chicken, Santa Maria Style BBQ Tri tip and Indian fry bread.

July 25th: Asian & Hawaiian BBQ
Explore the many different types of BBQ found throughout Asia and the Pacific islands from delicious and authentic Philippine and Thai street food to Classic Korean BBQ and local flavors of the Pacific Island Luau.

August 8th: The Perfect Steak
Discover all the techniques needed to make that perfect steak. Study and understand the different cuts and grades of steak, where they come from on the beef, and the most delicious ways to enhance and cook them for your guests.

August 22th: World of Spices
Learn about the spices that hold the key to the culinary history of the world. Explore the sea routes which opened up the old and new worlds and which shaped the cultural flavors of the food regions in the world. From Indonesian rendang spiced filet mignon and Caribbean jerk spiced chicken to Chinese five spice grilled pork ribs from Vietnam.

September 5th: Burgers & Brews
During this series we will review the techniques, key fundamentals and chef secrets to make that prefect juicy burger for the best summer BBQ festivities. Enjoy learning to make blue cheese stuffed burgers with caramelized onions, Lamb burgers with harissa aioli to Kobe beef burgers with truffle cheese & watercress. These amazing burger creations will be matched with the prefect beer for maximum flavor enhancement.
